Intro: The Leaf That Always Gets Left Behind
Every time I cook, there’s that one moment —
the curry is done, plates are served,
and someone says, “Take out the curry leaves!”
I smile, because I used to do the same
Pluck them out, push them aside,
as if their work was only to flavor and disappear
But one morning, as I was cleaning the kitchen,
a single curry leaf stuck to the side of the sink refusing to wash away
It clung there, bright green and fragrant,
as if saying — “I may be small, but I stayed till the end.”
That’s when I realized —
we throw away the very things that make everything else come alive
Origin & Story – Where This Curry Leaf Coconut Curry Was Born
This curry has no royal lineage
It didn’t come from a restaurant, a cookbook, or some famous chef
Its origin is much simpler —
it was born from a homemaker who didn’t want to waste the handful of curry leaves sitting quietly at the bottom of her vegetable basket
In older Indian homes, throwing away curry leaves was almost a crime — they were considered sacred, healing, fragrant, and full of life
So women would grind them with coconut, chillies, and a pinch of jeera…
and turn those “leftover leaves” into a curry that fed the whole family
This curry was created out of resourcefulness,
out of love,
and sometimes,
out of days when the vegetable basket looked too empty but the stomachs still needed warmth
A Relatable Mini-Story of Curry Leaf Coconut Curry
Yesterday was one of those “I have nothing to cook” evenings
The fridge looked like it had given up on me.
One tomato sulking in the corner, half a coconut, and a lonely bunch of curry leaves
For a moment, I almost tossed the curry leaves away —
but something stopped me
Maybe habit
Maybe guilt
Maybe the tiny voice inside saying:
“Don’t throw me. I can still become something.”
I washed them, ground them with coconut, and made a simple curry
When I tasted it…
I smiled
Warm. Comforting. So full of aroma
Dinner was saved — not by vegetables, not by effort —
but by a handful of leaves that refused to be discarded
And I wondered:
How many times have I felt like those leaves — overlooked, tired, taken for granted — and still carried worth inside me?
Recipe: curry leaf Coconut Curry with a Curry Leaf Oil Tempering
Ingredients
1 cup grated coconut
2 green chilies
1 small onion, chopped
2 tbsp coconut oil
1 tsp mustard seeds
A handful of fresh curry leaves (10–15)
1 dry red chili
Salt to taste
1 and half cups water
Method to make the Curry Leaf Coconut Curry
Grind together the grated coconut, green chilies and a little water into a smooth paste
Heat coconut oil in a pan, add mustard seeds and let them crackle
Add curry leaves and red chilies and let them crisp up
take the curry leaves and the chillies out
crush them nicely to powder
in the same pan Sauté the onions till light golden
add the crushed curry leaves and red chillies to it
Add the coconut paste, salt, and water and let it Simmer for 10 minutes
Now for the tadka:
In a small pan, put warm 1 tbsp oil, add few mustard seeds and few curry leaves and fry till deep green
pour this curry leaf oil and drizzle over your finished curry
