1. In Doughs (Chapati / Paratha / Poori)
Boil and mash the pumpkin, add it to the wheat flour while kneading
It makes rotis softer and gives a subtle golden color
Kids rarely notice but they get the extra fiber and vitamins of the vegetable

2. In Gravies
Blend boiled pumpkin and add to gravies (paneer butter masala, dal, or even sambhar)
It thickens the curry naturally so there is no need for extra cream or cornflour

3. In Dosa / Idli Batter
Grate raw pumpkin and mix into batter
Adds light sweetness and softness without changing the taste much

4. In Snacks
Add grated pumpkin to pakora batter
Mix into cutlet dough along with potato or poha

you can grate the pumpkin and keep in fridge for 4 to 5 days
