let’s get into the recipe..
🥔 Ingredients required for the aloo methi sabzi :
2 medium potatoes (cut into big cubes)
1.5 cups fresh methi leaves (fenugreek), cleaned and roughly chopped
¼ cup fresh grated coconut
A small handful of fresh coriander leaves
2 ripe tomatoes
2-3 green chillies (adjust to taste)
½ tsp roasted jeera (cumin)
A few sprigs of kadi patta (curry leaves)
Salt to taste
Water as needed
🔪 Preparation for the aloo methi sabzi :
Step 1: Cook the Basics
In a pot, add your big potato chunks and methi leaves together with a little water
Let it gently boil—just until the potatoes turn fork-soft and the methi has softened
Now separate them. Let the potato wait since The methi has more work to do
Step 2: Make the Green Elixir
In a mixie jar, blend grated coconut and fresh coriander leaves into a smooth base
Then, add tomatoes, green chillies, jeera, curry leaves, salt and the cooked methi leaves.
Blend everything again into a fine, aromatic green paste
Strain the mixture for a silky-smooth, rich liquid
Step 3: The Final Union
Pour the strained green gravy over the cooked potatoes
Let the gravy come to a gentle boil and Turn off the gas. Now don’t rush. Close the lid and let the flavors mingle quietly for 5-7 minutes
