DRY CHICKEN
Today, I’m sharing a soulful, spiced dry chicken recipe that doesn’t just fill your home with aroma—it stirs stories, reminds you of lazy Sunday afternoons
Let’s begin with the dry chicken recipe:
🧅 The Aromatic Start:
In a large pan, take:
3 big onions, thinly sliced
1 tablespoon finely chopped ginger
1 tablespoon finely chopped garlic
2–3 slit green chillies
Let them sit in a bowl, waiting for the magic.

🌶️ The Secret Behind the Sizzle:
What if dry-roasting spices could awaken not just flavor, but feelings?
In another pan, dry roast:
3 tbsp red chilli powder
2 tbsp dhania (coriander) powder
½ tsp haldi (turmeric)
Let the powders bloom in heat. Then mix them straight into the onions.

Use your hands. Yes, hands
Press, mix, feel. This is more than marination—this is memory making
Now add:
1 kg chicken
Required salt
Massage it in. Let the marination rest for 30 minutes
🍅 The Final Bloom for the dry chicken recipe:
In a heavy-bottomed pan, heat oil
Add in :
The marinated chicken
2 chopped tomatoes
2 tsp grated fresh coconut
Chicken or meat masala powder
A handful of chopped coriander leaves
Fresh kadipatta (curry leaves)
Stir gently. Close the lid
Let it cook on low flame for 20–25 minutes. No water. The chicken will release its own liquid
Open the lid to a bubbling, fragrant curry
time to check whether the chicken is cooked. if not, cook it further more
Now add:
2 tsp coconut oil
1 tsp black pepper powder
Cook till the masala clings to the chicken. Thick. Rich. Dry. Deep red
🍽️ dry Chicken is Ready to serve
Serve it with hot phulkas or ghee rice
Or just eat straight from the pan—if no one’s looking
