HOW TO MAKE INSTANT HOME MADE TASTY MANGO PICKLE
INTRODUCTION
Let me share with you a tasty mango pickle recipe which i have been seeing my mom making and now i frequently make it which my family relishes very much. so thought of sharing with my friends and i hope you like it as well
here i would like you to buy BEDEKAR ACHAR ( PICKLE ) MASALA POWDER.
i am not promoting this product but we have been using it for many years and it really makes tasty pickles.
you can get it at grocery stores or else you can buy it online as well. this time i too bought few packets online and stored it in fridge so as to not lose it’s flavor
so here goes
tHE INGREDIENTS FOR THE TASTY MANGO PICKLE
1.
bedekar pickle masala

2.
cut ( small or big ) raw mangoes ..any variety can be taken

3.
1 semi ripe mango for that sweet tangy taste

4.
jaggery powder

5.
turmeric

6.
hing ( asafoetida )

7.
curry leaves (kadi Patta )

8.
few cloves of garlic thinly sliced

9.
sesame oil ( til oil )

10.
salt
PROCESS TO MAKE
1.
take the cut mangoes in a bowl say suppose 3 mangoes and 1 semi ripe mango.
2.
add 1 teaspoon turmeric, 4 to 5 tablespoon bedekar masala, jaggery Depending how much sweet you want and salt to taste
3.
mix everything really well so that the mangoes are coated with the masala
4.
now heat oil ( just quarter of how much your mangoes are ) in a pan. bring it to smoking point and turn off the gas
5.
once it has slightly cooled down, add a pinch of hing, few curry leaves and sliced garlic to the oil
6.
now at this stage add a small bowl of water
7.
turn on the gas and once it starts to boil, add the mango mixture and let it boil on high flame for less than 1 minute and switch off the gas
8.
here at this stage, taste the pickle and see whether salt or jaggery is to be added according to your taste and then close the lid for 15 minutes
9.
then open and let it cool down completely and transfer it to glass jars
10.
if you have access to sunlight at any point of the day, then you can keep it in sunlight for 2 days
11.
keep stirring in between as less oil has been used and fungus may accumulate on top
after 2 days the pickle is ready to serve and then you can keep it in fridge.
it stays for 2 months easily
