🍳 Step-by-Step: The Pickle Magic in Minutes
1. Mango Meetup
Cut the raw mangoes and the semi ripe mango and place them in a bowl
2. Spice It Up
Add the following to the mixture
1 tsp turmeric
4–5 tbsp Bedekar masala
Jaggery (as sweet as your current mood)
Salt to taste
Mix until every piece is coated like it is ready for a masala spa treatment
3. Oil On Point
Heat the sesame oil (roughly 1/4th the amount of mango) until smoking hot. Turn off the gas. Let it calm down
4. Tadka Time!
Add a pinch of hing, a few curry leaves, and sliced garlic into the warm oil
5. Splash Zone
Now, add a small bowl of water to the oil
6. Mango Dive
Turn the gas back on. Add your masala-coated mangoes to the bubbling mix. Let it boil on high flame for less than a minute and then Switch off the flame

Once it’s cooled, transfer the pickle to clean glass jars

If you get a bit of sunlight, place the jar out for 2 days. Helps flavors mingle and enhance better
