Pick what’s in your fridge or in season! You can use:
Lauki (doodhi)
Carrots
Beans
Green peas
Or even zucchini and cauliflower!
Step 1: Cut, Steam & Smile
Cut the vegetables into medium-sized pieces and steam them till they are tender
If you don’t have a steamer then just bring them to a gentle boil in water for 5–7 minutes
No salt, no spice, just pure veggie goodness

step 2- now In a blender, combine the ingredients below:
2 ripe tomatoes
1 to 2 tablespoons of grated raw coconut
1 tsp roasted jeera (cumin)
A few green chillies (as spicy as you like)
A handful of fresh kadi patta (curry leaves)
Salt to taste
Grind into a fine paste. Then strain it using a metal strainer to get a smooth and velvety texture
Once your vegetables are done and the gas is off, pour in the freshly ground masala paste
That’s right—no cooking required
Just mix it all up, close the lid, and let the steam do the final cooking for 10 minutes
