It just wants something homely, warm, and soothing on the plate
And that’s when pumpkin subzi steps in
Soft, golden cubes of pumpkin, lightly spiced and cooked down to a gentle sweetness
Ingredients for the pumpkin recipe — 2–3 servings
2 cups pumpkin peeled and cubed
1 tbsp oil (coconut oil or any cooking oil)
½ tsp mustard/rai seeds
1/2 tsp fenugreek/methi seeds
½ tsp cumin/jeera seeds
1 sprig curry leaves (optional but heavenly)
1 green chili (slit)
½ tsp turmeric powder
1 tsp red chili powder (adjust to taste)
1 tsp garam masala
1 onion
1 tomato
Salt to taste
Fresh coriander leaves to garnish
🔥 Method to prepare
Heat oil in a pan
Add mustard seeds and let them splutter
Add cumin seeds, methi seeds, curry leaves and green chili
The aroma fills the kitchen right here
put the onions and tomatoes and saute well
Add pumpkin cubes, turmeric, chili powder and salt. Stir well
Sprinkle a little water, cover and let it cook on low flame until pumpkin turns soft (10–12 minutes)
Mash lightly with the back of the spoon if you like it mushy or keep the cubes intact for a chunkier feel
Finish the recipe with fresh coriander leaves

Ingredients for the pumpkin (for 3–4 servings)
2 cups pumpkin (grated)
2 tbsp ghee
half cup milk (or more, depending on consistency)
half cup sugar (adjust to taste; jaggery can also be used)
half tsp cardamom powder
A few cashews and raisins, roasted in ghee
🔥 Method to prepare
Heat ghee in a pan
roast cashews and raisins until golden. Remove and keep aside
Add the grated pumpkin to the same pan and saute until the raw smell disappears for about 6–8 minutes
Pour in milk and cook until the pumpkin softens and blends into a smooth mixture
Add in the sugar or jaggery and stir well
The halwa will thicken as it cooks
Sprinkle cardamom powder and mix in the roasted nuts and raisins
Serve warm garnished with a few more cashews if you wish

Ingredients for the pumpkin soup for 3 to 4 servings
2 cups pumpkin — peeled and cubed
1 small onion (sliced)
1 small piece of ginger (1 inch)
2–3 garlic cloves
1 green chili (slit, optional for spice)
half tsp cumin seeds
1 tbsp oil or ghee
Salt to taste
Black pepper powder to taste
Fresh coriander leaves for garnishing
half tsp roasted cumin powder (optional, for finishing)
🔥 Method to prepare
Heat oil or ghee in a pressure cooker or pan
Add cumin seeds and let them splutter
Add onion, ginger, garlic and chili. Sauté till onions turn soft
Add pumpkin cubes and sauté for 2–3 minutes
Pour 2 cups water add salt and cook until pumpkin softens (2 whistles in pressure cooker or 12–15 min in pan)
Once cooled slightly, blend into a smooth puree
Return to the pan, adjust consistency with more water if needed
Add pepper and roasted cumin powder. Simmer for 2–3 minutes
Garnish with fresh coriander leaves. Serve hot
