let me share with you a healthy buttermilk recipe which is healthy and tasty as well.

i have been making it for some time now and my family loves it so thought of sharing this recipe with my friends as well

LET’S FIRST HEAR ABOUT A TEMPLE FACT RELATED TO BUTTERMILK

pouring in gallons of milk over shivalinga to pay tribute to lord shiva is an age old tradition in indian tradition and rituals

on the other side, india is one of the few countries with the highest rate of malnutrition

however, in today’s times, people are trying to embrace rationale in choosing survival over tradition and fight against malnutrition over wastage in the name of devotion these days

in bengaluru, gangadhareshwara temple has adopted a solution to let devotees offer liters of milk to the shivalinga and make the best of their devotional offering in a hygienic way

if devotees offer milk at this temple, they get buttermilk as prasadam in return

lord shiva being the presiding deity, bengaluru’s gangadhareshwar temple receives 500 liters of milk every monday

the milk offering increases on important religious days and festivals especially during maha shivaratri

it would have been a colossal waste of resources had the temple authorities not found out this innovative idea to recycle the milk poured over the shivalinga and also not let the devotion of people drain away

the man behind the initiative to convert milk offering into buttermilk prasadam for devotees is mr. eeshwarananda swami, the head of gangadhareshwara temple

the search on how to recycle and reuse the milk to serve devotees and others made him research a lot and also how to set an example to other temple as well

thus, the middle of the road solution was found and implemented

devotees who visit the temple have to adhere to certain temple guidelines, thus keeping the Hygiene part in mind as the milk has to be Reprocessed

they can only pour milk To the shivalinga

the temple has set certain rules for vermillion and flowers and leaves offerings

this hygienic process is required to be followed for maintaining the good quality of the milk

this milk offered to the deity is then fermented and turned into buttermilk

as the process takes a day, the prasadam is given the next day – generally on tuesdays as on monday there is a heavy usage of milk

mr. eeshwarananda swamy says we distribute buttermilk as prasadam only after checking it’s quality with the help of food quality analysts

it is said that a heavy queue of people to receive the buttermilk Prasadam at Bengaluru gangadhareshwara temple is a common site every tuesday

INGREDIENTS FOR THE BUTTERMILK RECIPE

1 cup kadipatta / curry leaves

BUTTERMILK RECIPE

half cup coriander leaves

1 small green chilli

1 small piece of ginger

curd 1 cup

few mint leaves

water 2 glasses

1 teaspoon ghee

a pinch of jeera powder and hing

black or rock salt to taste

before making the recipe, we need to prepare a chutney before hand

THE GREEN CHUTNEY RECIPE FOR THE BUTTERMILK

1. Grind 1 cup kadipatta or curry leaves , half cup of coriander leaves , 1 small green chilli , a small piece of ginger and Grind It well with very little water to form a paste like consistency

2. you can store it preferably in a glass container in fridge for 4 days

HOW TO MAKE THE BUTTERMILK

1. First blend 1 cup curd, water and few mint leaves in a mixer

2. add 2 glasses of water to it and blend it well

you can increase the quantity of water depending upon the thickness of the curd

3. i have not added the mint leaves in the chutney as it would make the chutney little bitter and dark in color if stored in fridge. so i generally prefer fresh mint leaves

4. transfer the buttermilk in a vessel.

take a strainer and take 1 or 2 teaspoon of the chutney which we had prepared and pass it through the strainer. do not throw the residue

NOW FOR HEALTHY TADKA

1. Take 1 teaspoon of ghee in a pan

2. add in hing, jeera powder and half of the residue of the chutney and off the flame and saute it well

3. put the tadka in the buttermilk and mix it really well

4. put the other half of the residue in sabzi or making dals

5. add the rock salt or black salt

your healthy buttermilk is ready to serve

it is cooling to the stomach

if you have it after lunch, you tend to burp thus releasing all the gas in the tummy and make you feel lighter... my personal experience
