BUTTERMILK
let me share with you a tasty healthy buttermilk ( chaas ) recipe which i have recently started making it and enjoying it with my family
so thought of sharing it with my friends as well
what i do at first is make a chutney and keep it in fridge for maximum 4 days
CHUTNEY RECIPE FOR THE BUTTERMILK
1. grind 1 cup of kadipatta / curry leaves, half cup of coriander leaves, 1 small green chilli, 1 small piece of ginger and grind it well with very little water to form paste like consistency
2. you can store it preferably in a glass container in fridge for 4 days

HOW TO MAKE THE BUTTERMILK
1. first blend 1 cup of curd, water and few mint leaves in a mixie.
2. then add 2 glasses of water to it and blend well
you increase the consistency of water depending upon the thickness of the curd
3. i didn’t add the mint leaves in the chutney as it would make the chutney little bitter and dark in color if stored in the fridge. so i generally prefer fresh mint leaves
4. transfer the buttermilk in a vessel. take a strainer and take 1 or 2 teaspoon of the chutney which we had prepared and pass it to the strainer do not throw the residue
now for the healthy TADKA
1. take 1 teaspoon of ghee in a pan
2. add in hing, jeera and half of the residue of the chutney and off the flame and saute it well
3. put the tadka in the buttermilk and mix it really well
4. the other half of the residue can be put in sabzi or making dals
5. add rock salt or black salt and your healthy buttermilk is ready to serve

it is cooling to the stomach
when had after your lunch you tend burp thus releasing all the gas in the tummy and make you feel lighter .. my personal experience
