Let’s talk about a recipe in this blog.

it is not a recipe but an easy and simple home made coconut Onion Mixture for curries both vegetarian and non vegetarian

and the best part is you can store it in freezer for long time as well

INTRODUCTION

just as we make ginger garlic paste or onion tomato paste and store it for a week or so in fridge, this coconut onion mixture also follows the same pattern but it can be stored in Freezer for a longer use

This coconut onion mixture combines the earthy sweetness of coconut with onions, resulting in a unique taste that promotes to transform the curry experience

COCONUT MIX FOR CURRIES

iNGREDIENTS FOR THE COCONUT MIX

1. methi ( fenugreek ) seeds 4 to 5 seeds

2. onions 2 medium sized

3. dried red chillies ( preferable bedgi chillies )… 4 to 5 nos.

4. kadi patta or curry leaves .. handful of leaves

5. coconut grated .. equal quantity to the amount of onions

6. coriander powder .. 3 to 4 tablespoon

7. red chilli powder .. 1 tablespoon

8. black pepper powder .. 1 tablespoon

RECIPE FOR THE COCONUT MIX

1. in a kadhai or pan, take little oil

2. put the methi seeds

3. after they splutter, add the sliced onions and saute till they turn translucent

4. add in the Dried red chillies and Kadi patta and saute till the onions become slightly brown

5. now add in the grated coconut and saute till the coconut becomes light brown

6. turn off the flame and immediately add in the coriander powder, red chilli powder and the Pepper powder and give it a nice mix

all these powders are only to be slightly heated hence it is To be added after putting off the flame

however, if you happen to use whole coriander instead of the powder then you have to put it along with the grated coconut since it needs to be Cooked

7. let the mixture cool nicely and grind it to a nice smooth paste

8. transfer it in small containers and keep it in Freezer

reason for keeping it in many small containers is that since this mixture can be used for many Variety gravies

only the required quantity is needed to be taken out as compared to the whole lot if kept in single large containers

chances are also that they might get spoilt faster if taken The whole lot out and kept back in freezer. hence to be kept in small containers

RECIPES WHERE THIS COCOCUT MIX CAN BE USED

HOW TO MAKE SAMBHAR USING THIS COCONUT MIX

to make sambhar,

1. boil 1 cup tuvar or arhar dal and the required vegetables.

2. take it in a cooking utensil, add tamarind pulp, 2 tablespoon of Sambhar powder and 4 to 5 big tablespoon of this Coconut mixture

( the coconut mixture can be increased or reduced depending upon the consistency of the curry as some may like it little thicker and some may like it little a flowing consistency )

4. let it simmer for some time

5. lastly temper it with rye, hing, kadi patta and Dried red chillies

tasty hot yummy sambhar ready to serve

HOW TO mAKE EGG CURRY USING THIS COCONUT MIXTURE

to make egg curry

1. in a pan, add little oil,

2. saute onion, tomato, ginger, garlic along with the required quantity of dry powders like Turmeric, red chillies, coriander powder, jeera powder, black pepper powder and salt to taste

3. mix it really well Till it forms like a thick paste

4. now add in the Chicken masala powder and our Coconut mixture and little water to mix all the masalas well and let it simmer for 2 minutes

5. add in the boiled eggs and let it simmer for a few minutes till all the juices enter the egg curry

6. remove from the flame and garnish it with finely chopped coriander leaves

your yummy mouthwatering egg curry ready to serve

HOW TO MAKE FISH CURRY USING OUR MAGICAL COCONUT MIXTURE

while making fish curry

1. take oil in a pan

2. put in finely chopped onions, slit green chillies and finely chopped ginger. you can add Garlic as well.

3. add in the kadi patta

4. saute till the onions are finely cooked and slightly brown

5. now add in the dry powders like turmeric, red chilli powder, black Pepper powder and little Methi powder and saute well

6. add in little water if the masala is dry and saute for some time

7. herein add the tamarind pulp and the coconut mixture and saute till everything is blended well

8. add in the fish pieces, salt and required Water and mix well

9. close the lid and let it for some time till the fish is cooked

10. off the flame and add a teaspoon of coconut oil and mix well

your tasty, delicious fish curry ready to serve

HOW TO MAKE CHICKEN CURRY USING OUR MULTIPURPOSE COCONUT MIXTURE

to make chicken curry

1. take a pan, put oil

2. add in the tej patta and finely chopped Onions and saute well till it is golden brown

3. now add in the ginger garlic paste and our coconut mixture and saute well

4. put all the dry powder like haldi powder, red chilli powder , black pepper powder and chicken masala and little water and blend all the ingredients really well

5. now add in the chicken pieces, salt and little more required quantity of water and mix well

6. put in sliced tomatoes on top and close the lid and let it simmer for half an hour or till the chicken is Cooked really well

7. temper it in coconut oil with Rye, dried red chillies and lots of Kadipatta

and voila your yummy chicken curry is ready to serve

you can also make any vegetable mix curries using this coconut mixture

all you need is your creative mindset to prove your culinary skills
