endless varieties of raita are available

different dressings, different veggies on the table

raitas give company to any kind of food

they add luster and freshness and pick up our mood

some with curd, some with lemon, some just with sprinkled salt and pepper

add some crunchies and some herbs to make a lovely supper

raitas are such a versatile dish

anywhere anytime with any meal you wish


so that’s our favorite raita

WHAT’S THE RAITA CONCEPT

raita is a side dish in indian cuisine made of dahi ( yoghurt or curd ) together with cooked or raw vegetables or along with herbs and condiments

it is commonly served alongside spicy curries and biriyanis and even rotis

for generations, this appetizing accompaniment, characterized by it’s harmonious combination of yoghurt, herbs and spices, have captivated the hearts of not just inside the indian sub continent but also in other regions

the term ‘ raita ‘ originates from the sanskrit term ‘rajika’ which signifies a blend or mixture

ayurvedic literature emphasizes the significance of achieving a harmonious balance of flavor and ingredients in a meal which the raita has successfully accomplished

reference to curd or yoghurt can be found in ancient indian scriptures specifically in the rigveda, which has a history dating back more than 3000 years

2 types of yummy RAITAS for you

1. GREEN CHILLI RAITA

Stuff You’ll Need to Whip Up a Tasty Raita

green chillies … 2 to 3 nos.

curd …… 1 cup

hing …… a pinch

salt to taste

How to Cool Down with Spicy Green Chilli Raita

take 2 to 3 green chillies ( less spicy ) and put it directly on gas till it becomes light brown

now crush the green chillies

add the curd, hing and salt and mix it really well

yummy green chilli salad to serve

2. KADI PATTA / CURRY LEAVES RAITA

ingredients required for the raita

oil …. 1 tablespoon

rye ….. half teaspoon

red chillies ….. 5 to 6 nos.

kadi patta leaves …. 1 cup

grated coconut ….. half cup

curd ….. 1 cup

salt to taste

LET’S MAKE THE KADI PATTA RAITA

take oil in pan, put rye

after it splutters, add red chillies and saute

then add in the kadi patta and saute till it crispy

remove from the heat

after it is cooled, powder the crispy kadi patta and red chillies either with hand or in a pulse in mixer

add in the grated coconut to the mixture, curd and salt and mix well

yummy kadi patta raita ready to salt
